Cauliflower Soup

Cauliflower is not just for breakfast anymore. Just kidding. It never was. But if it’s a soup like this, maybe it should be.

Shopping List

Cauliflower: 2 cups
Celery: ½ cup chopped
Turnip: 1 medium chopped
Lemon Juice: 1 T
Butter: 2 T
Flour/Arrowroot: 1 T
Bay Leaf: 1
Thyme: pinch
Half & Half: 1.5 cups
S & P: ½ tsp and to taste
Water: 2 cups
Parsley: palm size finely chopped

Preparation

In a pot/ Dutch oven add florets and turnip with water, salt, and lemon juice. Then cook on high boiling 5 minutes. Next reduce heat to medium, cover and cook 15 minutes longer. Then remove florets and turnip but reserve liquid.

In the pot brown butter on medium.

Meanwhile stir in flour to 3/4 reserve liquid and fork blend.

Next gradually add to brown butter and cook on low stirring until thick and smooth.

Then add celery, bay leaves, thyme, S & P, and cream. Next continue to cook slowly stirring until smooth about 10 minutes longer. Then add ½ florets. Simmer.

Meanwhile smash other ½ florets and turnip with potato masher or electric beater. Then add a T of cream. Now add immediately to pot and continue to simmer until heated through.

Finally garnish with parsley. Then enjoy with a crusty toast.

And those wise guys use it in a variety of dishes and soups. Because it grows best in cooler temperature. While also making a nice edible addition to planters. Its best known variety is white. But it comes in a purple variety too.

In fact, cauliflower and broccoli are known to be flowery crops. Because their grown for their flowery buds. Hence the name florets. They also happen to be relatives of the wild and crazy cabbage family. And that means being delicious!

They are also highly prized for their nutritional value. So, it’s hard to overvalue their healing power. Look for no-spots on either bright green, purple or brilliant white florets.

Because new recipes pop up daily. Sometimes even as ice cream—who would’ve guessed.

CHEESY. It’s said that it’s nothing more than milk’s rush toward immortality.
In fact, nobody really knows who ate the first piece of cheese. But Romans get points for introducing curd and whey to Europe.

And Europe remains market leader in cheese production. So much so, that throughout history cheese remains a perfect 10. In fact, Andrew Jackson once shared a 1,400-pound cheese wedge with his public. They rushed to eat it! Then declared a holiday.

Playful Cheesy Soup

Shopping List

Cheese: 2 slices of cheese (your choice)
Butter: 2 T
Onion, Celery, Carrots, White Potato: ½ cup each finely chopped
Flour: 1 T
Chicken Broth: 2 cups
Cauliflower: 1 package cheesy cauliflower

Preparation

In a pot/Dutch oven melt butter over medium heat; add vegetables and sauté until vegetables are tender and fragrant, 8-10 minutes. Cool.

Meanwhile prepare cauliflower according to directions. Cool.

Then in a blender puree all the above with 1 cup broth. Then fork blend flour into mixture. And return to the pot along with any broth.

Bring to a slow boil; reduce heat to medium low and add cheese.
Stir until melted and hot.

CHEESY NOTES

CHEESY Ben Franklin also wrote if he could’ve found a recipe to make Italian cheese… It would’ve been a decade of discovery. In fact, cheese contributes to many of humankind’s feast or famine eating habits. Gorging when abundant. Then starving when there was none.

But it was trial and error that lead to cheese’s discovery. And of course, tasting cheese lead to it’s enjoy-ability. In fact just as cider preserved the apple, cheese preserved milk.

And although, France is the leading cheese consumer. Tiny Iceland consumes enough to come in second.

As for pizza, Americans consume that by the BILLIONS. Thus, exceeding every country in the world. Even Italy.

Of course, we enjoy cheese with many things besides pizza. Like crackers. Or wine. Also, hamburgers, vegetables, salads, tacos, and melting it in a creamy soup.

Because imagination only limits where you choose to put your cheese.

10 for 10 it’s melting on “stuff” around world. By blending traditional recipes. Then adding some kinda cheese.

RED STUFF. The most unexpected ingredients get praise for their ability to stimulate sexual attraction.

More than for their health-related properties of course. And so, from ancient times to modern times many are still—surprising.

Perhaps we should refer to the tomato as overly passionate. As well as those whom eat them.

But for now onions, garlic, and tomatoes will continue to appear in most dishes around the globe. So, let a bowl of the red stuff heat up the body on a cold night or any night…for that matter. Bottom line…for more passion—EAT RED!

Tomatoes. Because there is a fine line between passionate red and the edible green.

SHOPPINg LIST

Olive Oil: 3 T
Yellow Onion: 1 chopped
Minced Garlic: 1 T
Turmeric: ½ tsp
Chicken Broth: 1 box
Crushed Tomatoes: 1 cans/4 fresh
V-8: 4 oz (spicy is preferred)
Half & Half: ½ cup
Grilled Cheese Dumplings
Salt & Pepper: to taste

Preparation

In a large pot/Dutch oven heat olive oil over medium heat. Add the onions and cook over medium-low heat for 3 minutes, stirring occasionally until fragrant.

Add the garlic and cook for 1 minute. Stir in the chicken broth, tomatoes, turmeric, and V-8. Bring to boil. Then simmer on low heat 15 minutes.
Stir in the heavy cream, continue to simmer 10 more minutes stirring frequently. Remove from heat.

Heat a medium pan or griddle. Lightly brush sourdough bread with butter & mayonnaise. Then place on griddle butter side down and load up with your favorite cheese (I prefer Swiss). Cook until golden brown and slice into bite size cubes. Eat these alone or atop of soup.

Then reheat slowly to serve.

*Alternate this soup with either rice, orzo, barley, or pasta. Kids aren’t the only ones who love the mini dumplings! EVERYONE DOSE.

RED TOMATOES LE NOTEs

Passionate, hardly. But certainly, many folks feel that way about their tomatoes. As you might be guessing, the little gems attracted the neophyte. Mostly for inciting excessive public passions. As local legend had it. So, they began planting them. They went all out, of course.

Because neophytes never want to start small and expand. Instead, they want to go big. And share the bounty with neighbors.

Red tomatoes! They gOT the power-house reputation!

Incidentally one plant per person is enough. Unless you plan on canning some for winter. But to plant two dozen, neophytes obviously had intentions of eating them morning, noon, and night. Or something else all together.

So, next summer watch how the sun travels across the neighbor’s garden. Especially if they’re growing excessively. In that case, they might be planting the art of persuasion!

Not to mention a touch of personal tastes.

HODGEPODGE SOUP: BRACE FOR WARMTH

Naughty, But Nice                                                Hodgepodge Soup

Hodgepodge. Its usual meaning is a disorderly mixture. But it can also mean messy or out of sorts. So, in other words you don’t have to follow this recipe to a T. Or any other for that matter. Because hodgepodge is utter hog-wash. But it sure is damn good soup. And any way you make it, has gotta be good.

So, if this soup leaves lots to the imagination your probably right. Because it allows for a rather wide degree of variation. Along with a handful of food-faddism. Which of course, will not give wild promises of glowing health.

But might surly have family and guests coming back for more. Unless that’s not the point you planned on making.

So, in that case slow-down. Because one cannot legislate against human preference. Or for that matter glowing skin and hair.

However, a bowl full of healthy veggies is never nutritional nonsense.

Because that would be unforgivable!

Hodgepodge Shopping List

Olive Oil: 2 T
Sweet Yellow Onion & Celery: ¼ cup each chopped
Okra: ¼ cup or more diced
Carrots: ½ cup diced
Squash: 1 cup (butternut)
Garlic: 2 cloves minced
Lean Hamburger: 1 lb.
Chicken Broth: 4-5 cups
Small Tomatoes: 5 halved and 2 T tomato paste w/1 cup water
Pasta: 1/2 cup uncooked any style (try a black bean pasta)
Great Northern: 1 can
Balsamic Vinegar: 2 T
Bay Leaves: 1
Dried Basil & Oregano: ½ tsp each
S & P: to taste

In a skillet/Dutch oven sauté onion, celery, garlic, tomatoes, basil, oregano, bay leaf, pinch salt, and pepper in olive oil; 7 minutes until lightly tender. Remove and set aside.

In the same skillet/ Dutch oven cook hamburger with ¼ cup balsamic vinegar until browned. Remove excess fat with spoon. Add sauté, broth, tomato paste, beans, and okra, squash, carrots; bring to boil 5 minutes. Simmer covered 40 minutes until all tender.

Soup are a great reminder that a day late is worth the wait for better flavors and taste. This is a great soup to add leftovers to—hence it makes vegetables a literal melody of perfection.

*Then re-heat slowly to serve.

HODGEPODGE NOTES. AKA HODDGY PODGGY

Let’s talk hodgepodge for a moment. Or the mishmash of colored vegetables containing high amounts of minerals, vitamins, and fiber. Which by the way are very beneficial to maintain glowing skin. Also better circulation for all organs. While including enhanced vision and improved digestion.

SHEESH! THAT’S A GREAT START!

Even an assortment of beans and a potpourri of whole grain pastas have rich benefits of their own. YEP! In fact, 60-70% of all cancer related diseases link to behaviors you can control—diet being the single most important part.

DROP DEAD! NOPE NOT WITH A SOUP CHUCKED FULL OF GOODNESS LIKE HODGEPODGE SOUP!

So, include a mixture of fresh fruits and heaps of veggies. Then scatter in some beans. Add a sprinkle of whole grain pastas. And a smidgen or two of rice daily. Than you’ll be balancing your diet before you know it.

Or as I like to say: WELL NOURISHED!

Because most of the time we should have an appearance of striking vitality and wellness. Of course, a good look in a full-length mirror usually does the trick.

“OH! YUCKY!”

In that case, hodgepodge soup is a great place to start the journey.

Because this soups chucked full of mixed flavors with a melody of tastes. Jumble the ingredients around all you want for a wickedly naughty soup.

THROW IT ALL IN, WHILE YOU TAKE IT ALL OFF—it’s hodgepodge!

In conclusion, there is no single food or activity that will assure good conditioning. Because variety is the best formula.
